Do you love coffee and chocolate? Then this is a super-quick and delicious breakfast for you.

Prep time: 10 minutes – cooking time: 30 seconds – resting time: overnight

 

FOR 2 SERVINGS:

60 g rolled oats (4 large tablespoons)
300 g Greek yogurt (or more)
2 espressos (or 2 packets of espresso powder + a little water)
40 g chocolate pearls (at least 70–80% cocoa) (about 2 tablespoons)

Overnight Oatmeal with Espresso and Chocolate

You prepare it the night before, and it's ready the next morning.

Put the oatmeal in a bowl and mix it with 2 tablespoons of yogurt and the espressos. Stir with a small spoon until smooth. Is it too wet?
Add some extra oatmeal. Is it too dry? Addsome yogurt.

Divide between two glasses.
Spoon a few tablespoons of yogurt on top to form the next layer. In a separate bowl, mix 3 tablespoons of yogurt with the chocolate pearls.
Microwave this for 20 to 30 seconds. Stir well until you have a nice chocolate sauce, then pour it over the yogurt layer. Place in the refrigerator and let it set overnight.

Finish off your breakfast the next morning with some extra chocolate pearls. That way, you can enjoy a nutritious breakfast and a delicious treat.

TIP: CHOCOLATE LAYER RATIO

For the chocolate layer (serves two) I mix about 70 grams of yogurt with 40 grams of chocolate pearls.
Put it in
in the microwave (20 to 30 sec.) and stir well; at first it may seem to curdle, but just keep stirring.

The Smartest Kitchen: Don't Go Overboard

This tastes like a dessert, but it's actually nutritious and very filling. That is, if you don’t go overboard with the chocolate. I use chocolate with 80% cacao, which in other words: 20% sugar. So even though you don’t add any sugar yourself, there’s still sugar in the chocolate. If you stick to the amounts I specify, that comes out to about 5 grams of sugar per person.
