Ingredients

For 2 people:
3 or 4 eggs (depending on how hungry you are)
1 ball of mozzarella
15 cherry tomatoes
15 g basil (see tip)

Preparation

Halve the tomatoes and simmer them in some olive oil with salt and pepper. Put a lid on the pan to speed up the cooking process.

Meanwhile, finely chop the basil and mix it into the eggs, season with salt and pepper.

Remove the cooked tomatoes from the pan, pour in the egg mixture, and arrange the tomatoes on top. 

Tear the mozzarella into pieces and spread over the omelet. If you want the mozzarella to melt completely, put the lid back on the pan.

Cut the omelet in half and serve directly from the pan. Finish with some basil, olive oil, and black pepper.

Very tasty and recognizable, yet different. And on top of that, quick to prepare! That's the way I like it.

TIP: Basil
I used basil with small leaves; it's easier to work with and has a stronger flavor. You can buy this basil at the supermarket.

 

TIP: Feeling really hungry?
Like the other dishes in this book, this dish serves two people, but if you're really hungry, use three or four eggs. You can always adjust the quantities to suit your needs.

Finally: I don't know whether you are a man, woman, or child, whether you are athletic or have a sedentary or physically demanding job. Quantities are very personal; learn to listen to your body. If you are hungry, eat more; if you have had enough, stop eating. Respect yourself.
