Preparation
Preheat the oven to 180 °C. Wash the orange. Cut the onion, fennel and orange into thin slices about 0.5 centimeters thick.
First, lay the onion slices flat in a baking dish and pour some olive oil over them. Top with the fennel slices, season with salt and pepper and the sprigs of thyme, and pour some olive oil over them. Finish with the orange slices and some more olive oil. Place the chicken pieces on top. Mix the ras el hanout, soy sauce, honey and a good splash of olive oil. Season with salt and pepper. Coat the chicken meat all over with this. Cover the baking dish with a lid or aluminum foil.
Place in the oven for 30 minutes. Remove the lid or foil and leave in the oven for another 10 minutes until everything is cooked. Serve from the baking dish.
"This chicken is particularly flavorful, especially thanks to the addition of orange, which gives it a surprising twist."
