For 1 roll:
100 g almond flour
20 g golden flaxseed
10 g brown flaxseed
30 g sunflower seeds
50 g walnuts
40 g dried figs
50 g banana (1/2 banana)
1 egg
4 g sodium bicarbonate
100 g full-fat Greek yogurt (10% fat)
1 tablespoon lemon juice
½ teaspoon fennel seeds
Required: round baking pan or oven dish approx. 18 cm in diameter and baking paper
Preheat the oven to 200°C.
Place the almond flour, flaxseed, sunflower seeds, and half of the walnuts in a food processor and grind finely. Pour the flour into a bowl.
Use the same food processor and mix in the banana and egg until smooth. Pour into the flour.
Coarsely chop the figs and the rest of the walnuts with a knife and add them. Add the rest of the ingredients: yogurt, lemon juice, fennel seeds, baking soda, and a pinch of salt. Mix everything together well.
Line the baking pan with parchment paper and spoon in the dough. Bake for about 30 minutes or until nicely browned. Remove the bread from the baking tin and leave to cool completely on a wire rack.
