5 g ginger
2 teaspoons light soy sauce
2 teaspoons white balsamic vinegar
1 passion fruit
2 teaspoons coconut milk
1 lime
5 g chives

Preparation

  1. Carefully open the oysters and leave some of the liquid inside. Arrange them on a platter with ice or coarse salt so that they remain stable.
  2. Prepare the ginger-soy oysters (4 pieces)
    Finely grate the ginger until you have about ½ teaspoon of ginger puree. Finely chop the chives. Mix the ginger with 1 teaspoon of soy sauce, 4 drops of white balsamic vinegar, and a small amount of the chives. Divide this mixture over 4 oysters.
  3. Prepare the passion fruit and balsamic vinegar oysters (4 pieces)
    Cut the passion fruit in half and spoon the pulp into a small bowl. Add 8 drops of white balsamic vinegar and stir briefly. Season with black pepper. Divide this mixture over 4 oysters.
  4. Prepare the coconut-lime oysters (4 pieces)
    Mix the coconut milk with the lime juice. Season with some black pepper and some of the finely chopped chives. Spoon this mixture over the remaining 4 oysters.
  5. Serve the oysters immediately, well chilled. Finish with some extra chives if desired.

Three times the same oyster, three completely different journeys: spicy oriental, sunny tropical, and soft and creamy with a citrus kick.

Tip: quantities

First, taste your toppings separately: they should enhance the saltiness of the oyster, not overpower it.
