Ingredients

1 block of feta (feel free to use a little less, depending on how hungry you are)

2 medium carrots (300 g)

30 g pomegranate seeds

1 handful of pumpkin seeds

juice and zest of 1 lime

1 tablespoon of honey

1 teaspoon turmeric powder

1 teaspoon of cumin seeds

½ red chili pepper (if you like it spicy)

Preparation

Needed: baking dish

Preheat the oven to 180 °C.

 

Mix the honey with the turmeric, add black pepper, 2 tablespoons of olive oil, and the finely chopped chili pepper (if you have it

(used). Place the feta in a baking dish and spoon the honey mixture over it. Bake for 15 minutes or until the feta is soft

and warm.

 

Meanwhile, dice the carrots into small cubes. Heat a generous splash of olive oil in a pan, add the cumin seeds, and then the carrot cubes. Sauté for a few minutes, squeeze the lime over the mixture, and season with salt and pepper. Add the pumpkin seeds and let them cook briefly (be careful—they may pop). Remove the pan from the heat and stir in the pomegranate seeds.

Remove the baking dish from the oven and arrange the vegetables around the feta. Garnish with some lime zest. Serve immediately, right from the baking dish.

Very tasty and recognizable, yet different. And on top of that, quick to prepare! That's the way I like it.

TIP: HOW MUCH FETA AND CARROTS?

Are you really hungry? If so, plan on about 75 grams of feta per person (about half a block). I usually use a little less myself. The same goes for the carrots: if you’re not very hungry, smaller carrots will do. This is casual cooking—there’s no need to measure everything out. Just eat until you’re pleasantly full, but not stuffed.
