400 g spinach
200 g ricotta cheese
3 eggs
3 tbsp red curry paste

Preparation

Preheat the oven to 200 °C.
Stew the spinach in a saucepan that can also go in the oven.
Mix the ricotta with the red curry paste.
Carefully stir this ricotta mixture into the shrunken spinach.
Stir the eggs and briefly mix into the spinach so that not all the spinach is covered with egg.
Leave on the heat for 2 minutes and then place the pan in the oven for 5 minutes.

TIP: Curry paste

Add the curry paste spoon by spoon, tasting in between to avoid making the ricotta too spicy.
