Preparation

1. Cut the halloumi into slices. Fry them in olive oil until golden brown and crispy. Season only with pepper.

2. Slice the large tomatoes and halve the small ones, put in a bowl. Slice the snack cucumbers, the red onion in half rings and the garlic finely and add.

3. Add the basil leaves. Season with salt and pepper. Pour in the wine vinegar and a generous splash of olive oil. Stir everything together well.

4. Spoon the salad into plates and top with the halloumi slices. Top with a few more basil leaves and serve.

TIP: TOMATOES AND SNACK CUCUMBER

This dish really has to rely on the ripe flavor of tomatoes, so choose sun-ripened tomatoes and preferably different sizes, colors and varieties; that's when the flavor gets really full. Snack cucumbers are small cucumbers. They are firmer and also have more flavor.
