This weekly menu is taken from my book *Ketokuur*, which I co-authored with Prof. Hanno Pijl (internist and endocrinologist) and Dr. William Cortvriendt (physician and author). It was a unique collaboration: medical expertise and years of clinical experience combined with my creative approach to cooking.
Prof. Hanno Pijl takes a metabolic health approach. He emphasizes how important it is to calm insulin levels and restore the body’s metabolic flexibility. For years, Dr. William Cortvriendt has been explaining how excessive carbohydrate intake and insulin spikes contribute to obesity and chronic conditions. Together, we translate these insights into a concrete dietary plan.
What is a ketogenic diet?
A ketogenic diet involves severely limiting your carbohydrate intake, maintaining a normal protein intake, and deriving most of your energy from fats. As a result, your body switches from burning sugar to burning fat and produces ketones as an alternative fuel source.
This keto weekly meal plan is primarily intended as:
- a "reset"
- weight loss support
- a way to restore balance to your feelings of hunger and fullness
