Pour the coconut milk into a pan and mix with the curry paste. Start with 2 to 3 tablespoons of curry paste. If you want it a little spicier, you can add extra curry paste at the end.
Add some water if the sauce is too thick. It should have the consistency of a thick soup.
Divide the fish into portions and place them in the sauce. Season with some salt and pepper. Top with the spinach leaves, put a lid on the pan and simmer for 5 minutes on high heat.
