Ingredients

For 2 to 4 people:
200 g almond flour
25 g calamata olives, without stone
40 g grated emmentaler + extra
3 eggs + 1 egg yolk
50 g melted butter
+ extra butter to serve with it
2 anchovy fillets
a few sprigs of thyme, rosemary and parsley + some extra thyme leaves
7 g baking powder
a pinch of coarse sea salt

Preparation

Preheat the oven to 180°C.
Finely chop the olives, anchovies and herbs. In a bowl, mix the almond flour, eggs, egg yolk, baking powder, salt, butter, chopped herbs, olives, anchovies and grated cheese into a dough. Line the mold with baking paper and spoon in the dough.

Brush the dough with olive oil and sprinkle with the extra grated cheese and some thyme leaves.
Bake for 15 to 20 minutes or until the bread is nicely browned and crisp.
Serve with butter.
Eat the bread for breakfast or with a cheese platter, or just with some cream butter.

Serve this nut bread with good butter, that's all it takes.
