Preparation
Preheat the oven to 180°c. Finely slice the tomatoes, cutting away the hard white part. Place two heaping tablespoons of tomato slices in a casserole dish side by side and season with black pepper.
Mix the mustard with the soy sauce and two tablespoons of olive oil. Pour a few spoonfuls of the sauce over the tomatoes.
Place the fillets on the tomatoes and spoon the rest of the sauce over them.
Place in the oven for 15 to 20 minutes.
Tip!
Sometimes I charge two heaping servings per person, depending on how thick the fish fillet is and how hungry my guests are. If you take a cod fillet, which is usually thicker, one serving with tomatoes per person is enough.
