1 ripe avocado
2 tablespoons mascarpone (60 g)
1 spring onion
2 teaspoons of lumpfish roe

Preparation

Place the flesh of the avocado along with the mascarpone in a blender and blend until homogeneous. Season with salt and pepper.
Thinly slice the spring onion.

Arrange the salmon on the plates, divide the avocado-mascarpone mixture on top and sprinkle with the spring onions. Top with the lumpfish eggs.

The combination of avocado and mascarpone is so surprisingly delicious, it's magic.
