Preparation

Slice the mackerel fillets and mix with the pomegranate seeds, cilantro, sesame seeds and a generous splash of olive oil. Season with black pepper and a little fleur de sel.

Arrange the tartare between the head and tail in the shape of a fish. Add a spoonful and let everyone take how much they want.

 

Tip - bones
Mackerel has many fine bones, but don't let that put you off, because you can easily cut them off. Or ask your fishmonger, and you won't be bothered at all. Just ask them to keep one head and one tail. It is high time that mackerel is valued, because it is a delicious, healthy and cheap fish.

Tip - cilantro
I love cilantro, but not everyone likes the typical taste. Feel free to replace the cilantro with leaf parsley if you like it better.

'If you want to eat fish raw, see to it that it is very fresh. Mackerel in particular must be crisp fresh. Above all, have no hesitation in asking your fishmonger when the fish was caught.'
