Preparation

  1. Cut the tomatoes into random pieces. Remove the white, hard part. Halve the vine tomatoes and cut the dried tomatoes into smaller pieces. Cut the onion into thin slices.

  2. Combine all ingredients in a bowl. Season with salt and pepper.

  3. Now here's the trick: squeeze the moisture out of the vegetables with your hands so that all the flavors mix well and the vegetables soften. Then add a generous dash of olive oil and balsamic vinegar.

Tip: gently squeeze the vegetables

Not only does this soften the vegetables, it also gives you a delicious natural vinaigrette. It is a cooking method that is often used in macrobiotics. You have to try it first to know how delicious it is. Give it a go. It's fun too!

Tip: ripe tomatoes

It is important to choose ripe tomatoes that feel soft and are deep red in color.

Taste the overwhelming flavor of tomatoes

The taste of summer: A simple tomato salad

Nothing beats the real taste of a tomato that has been ripened in the sun. For us, a tomato salad is the ultimate proof that you can put a fantastic dish on the table with just a few good ingredients. You don't need complicated recipes or hours in the kitchen; it's all about the quality of what you buy.

In this tomato salad we use a clever combination of different types of tomatoes. The fresh vine tomatoes provide juiciness and freshness, while the sun-dried tomatoes in oil add an intense, savory flavor. By using these two together, you get a tomato salad immediately more character. Add a red onion for some spice, and you've already laid the foundation.

What a tomato salad is the dressing. We keep it simple: a good dash of olive oil and a little balsamic vinegar. The vinegar brings out the sweetness of the tomatoes and the oil gives it a silky smooth texture. It's a dish that instantly cheers you up when you put the bowl on the table. It looks beautifully red and smells wonderfully fresh.

This tomato salad is ideal as a light lunch or as a fresh side dish with a piece of fish or meat. It really is one of those recipes you can always fall back on.
