Preparation

Rinse the mussels carefully. Chop the garlic and sauté it in some olive oil in a large saucepan. Finely chop the parsley. Pour the cream with the garlic and add the chopped parsley. Place the mussels in the saucepan. Simmer gently under a lid for 5 to 7 minutes, until all the mussels are open. Stir to coat with a large spoon. Serve the mussels in a deep plate and pour in the liquid as a soup.
