Preparation
Remove the flesh from the avocado and cut into cubes.
Finely chop the pistachios.
Finely chop the herbs and the shallot into rings.
Put the avocado, nuts (keep some aside for finishing), herbs and shallot in a bowl, pour over a splash of white balsamic vinegar and season with salt and pepper. Mix everything together. Place the salmon slices on plates and spread the avocado mixture on top.
Spoon some salmon eggs here and there on the plates and finish with some more pistachio crumble.
Tip: salmon
If you don't like raw salmon, get smoked.
This is also delicious with slices of goat cheese or ham, but I would omit the salmon eggs.

Omit the white balsamic vinegar for a delicious keto recipe.
