Cut off the bottom, hard part of the mushroom stems. Cut the large mushrooms into quarters, leaving the small ones whole. Sauté them in quite a bit of olive oil. Season only with pepper. Soy sauce is already salty enough, so don't add extra salt.
Meanwhile, finely chop the spring onions.
Once the mushrooms are cooked, add water, until just submerged, and the soy sauce. Simmer for a few minutes more. Remove the pot from the heat, add the spring onions and the shrimp (see tip).
Serve this delicious meal soup.
Tip!
If you want to make this soup even more special, you can also add cilantro, a little garlic, a little turmeric and a touch of lime juice. Then it immediately becomes an exquisite appetizer.
Tip!
When you let gray shrimp cook with you, they become tough. Therefore, it is best to add them only when the pot is off the heat.
